Ingredients

4 duck breasts

For the marinade
2 coriander roots
4 garlic cloves
2 tbsp fish sauce
1 tsp palm sugar
2 tbsp vegetable oil

For the sauce
1½ cups button mushrooms
2 tbsp vegetable oil
2 tbsp garlic, chopped
2 tbsp sugar
1 tbsp pepper, crushed
1 tbsp oyster sauce
1 tsp fish sauce
6 tbsp chicken stock
Holy basil chopped
½ red pepper, chopped into pieces
½ yellow pepper, chopped into pieces

 

Method

  • First, place the ingredients for making the sauce into a mortar and pestle. Grind the ingredients until they are mixed together, marinating the duck breast for 30 minutes.

  • Grill the duck to medium-rare and slice in pieces.

  • Heat the oil in a wok or large frying pan over a medium heat. Add the chopped garlic, stir-fry for a minute.

  • Add the rest of ingredients and cook for 2 minutes.

  • Pour the sauce over the duck and top with crispy holy basil. Serve with Thai jasmine rice.
