One of L'Anima's signature dishes, this pudding is light and full of flavours - perfect for summer.

Ingredients

4 yellow peaches
50g amaretti biscuits
25ml prosecco
3 lavender flowers
30g demerara sugar
25g butter
80g ground almonds
1 egg
4 scoops honey ice-cream

Method

• Stone the peaches and fill it with a dough made with the amaretti, almonds, eggs and butter. Bake in the oven with in the prosecco and lavender. Serve with honey ice-cream.
